Mushroom soup( creamy
) 西式奶油蘑菇汤
Ingredients (材料): Serving for 3-4 persons
3-4人份
Today wanted to share another
easy way of cooking. This soup can be ready within 30 min.
100-125g Fresh
mushrooms–Shiitake/Portabello 100-125克新鲜香菇(日本菇)
100-150 ml water 100-150
毫升的水
1 small onion or half
big onion 一小粒大洋葱或/半个大洋葱
½ cup of Chicken broth + salt or 1 teaspoon chicken/fish stock+ 100ml water
鸡汤半杯+盐
或1茶匙鸡/鱼精粉+100ml水
20g of butter 20克牛油
3 table spoons of flour 3汤匙面粉
250 ml full cream milk 250毫升全脂牛奶
100g of whipping cream/heavy cream 100克鲜奶油
Pepper 胡椒粉
做法method:
- Cut mushrooms and onion into small portion, add water to grind them. 香菇和洋葱切成小份,加水研磨。
- Boil the grinded mixture of mushrooms . 煮蘑菇研磨混合物。
3. Add in
the chicken/fish stock plus water or Chicken broth plus salt. 放入鸡汤半杯+盐 或1茶匙鸡/鱼精粉+100ml水
4After
boiled turn to low heat and continue to simmer for 10min. 煮沸后转小火煮,继续煨10分钟。
5.At the same time, melt the butter in another pan
and add flour to make a paste in
low heat. 同时,在另一个锅里融化牛油,加入面粉,拌成面糊。
6.Mix
this paste into the mushroom soup. It is not easy to mix this sticky paste
into the soup evenly. My method is move some mushroom soup out into the pan
to dilute and soften the paste . By
doing so , it will be more easy to mix into the mushroom soup. Mixed till never see any dot of paste
anymore. 因不容易把面糊均匀地混入汤里。我的方法是参一些蘑菇汤入锅内以软化面糊。这样做,更容易把面糊混入蘑菇汤。混合至没有看到任何面糊为止。
7.After
mixed well, turn the fire into medium and pour the milk into the soup.
Continue to stir constantly until the soup begin to boil. 混合均匀后,转中火,倒入牛奶。继续搅拌,直到汤开始要沸腾。
8.Turn
the fire into low heat and pour in the whipping cream , cook without
boiling for another 10min. 转低火,倒入奶油,煮另一个10分钟。不沸。
9. Serving
with pepper powder. 吃时配上胡椒粉。
Remark: This soup is high-fat and
high cholesterol, hypertension and high cholesterol patient should not eat too
much ..... 注:此汤是高脂肪,高胆固醇,高血压和高胆固醇的病人不宜吃太多的......

How to make soy milk at home ? 如何在家里自制豆浆
It is easy to make soy milk at home,it might only take you 30 min to do it. You may buy an automatic soymilk maker . (also known as soy milk machine) or you actually can do without the machine.
Here we do without the machine as I don’t want the machine to occupy our home space. 在家里做豆浆是一件很容易的事.它可能只需要花你30分钟的时间。你可以买一个全自动豆浆机(也称为豆奶机),或者你其实也不需要机器。在这里,我们做没有豆浆机的方法,不买豆浆机来占据我们的家居空间。
Step 1: Ingredients 第一步:主料
有机黄豆1碗,水9.5碗。普通大豆,我建议用9碗水 即可(如果您需要的主料成分用克来计算,让我知道。我可以测量给你,我大约每周做豆浆2次。)
1 bowl of organic soya beans , 9.5 bowls of water. Normal soybeans , I suggest with 9 bowls of water (if you need the ingredients in gram. let me know, I will measure for you. I used to do it 2 times a week)
Step 2: Soaking the soya beans第二步:泡软黄豆
把黄豆洗净,放在水中浸泡放入冰箱过夜。泡软需要约10 小时以上。Wash the soya beans and soak them in water for overnight by keeping them in the fridge. Approx 10 hours and above.
Step 3: Grinding the soya beans第三步:磨黄豆
1)把泡软的黄豆加入3碗水放在搅拌机里,通电搅拌不超过一分钟,研磨浸泡后的黄豆。用咖啡袋或奶酪布过滤。筛上仍然不溶性物质被称为豆渣。2)把豆渣加入3碗水重复放在搅拌机,通电搅拌不超过二分钟。用咖啡袋或奶酪布过滤。3)第三轮,把豆渣加入3.5碗水重复放在搅拌机,通电搅拌不超过三分钟。用咖啡袋或奶酪布过滤。豆渣可用于制作豆沙,面包原料,或作动物饲料。
1)Grind the soaked soya beans with 3 bowls of water in a blender for not more than one minute . Sieve the mixture using coffee bag or cheese cloth as filter. The insoluble ingredient which remains on the sieve is called okara/ soybean residue. 2) place soybean residue with another 3 bowls of water, repeat on the blender, power stirring not more than two minutes Sieve the mixture using coffee bag or cheese cloth as filter. 3) The third round , placed the okara by adding 3.5 bowls of water in the blender and power stirring not more than three minutes. Sieve the mixture. The okara can be used to make bean paste, bread material or for animal feed.
Step 4: Boiling the soy milk第四步:煮豆浆
在豆浆里添加糖一起煮。(华人习惯喝甜豆浆)把豆浆煮到沸点,继续煮沸1分钟。必须准备一个大一点的锅,豆浆很容易在煮沸时溢出。煮沸后,取掉豆浆表面的泡沫。

Add sugar into soy milk. (Chinese used to drink sweet soymilk) Heat the soy milk till boiling point and continue boiling for 1 minutes. Must ready a bigger pot, soy milk easily overflow upon boiling . After boiled, remove the bubble on the top surface of the soy milk.Raw soy beans contain toxins , fully boiled is to prevent stomach upset. Kept the soy milk in the fridge can last for 3 days.
Remark备注:: you may add flavoring to your soy milk您可以添加调味改善口味。
The soy milk can be drunk in sweet as such, or you can add some salt. As for me, I will add ginger while boiling the milk. (Ginger help in reduce stomach 's wind)) 豆浆可以这样喝甜的,或者你可以添加一些盐。或者我加生姜煮沸。(姜帮助减少胃风)
Soymilk is an excellent source of protein, B-vitamins ,iron and calcium. It has low levels of saturated fat and no cholesterol. 豆浆是一种优良的蛋白质来源,B族维生素,铁,和钙。它具有低饱和脂肪,无胆固醇。

How to make Tiramisu(Italian dessert)怎样制作提拉米苏(意大利甜点)
材料(ingredients):
Mascarpone cheese 500g 乳酪 500克
egg yolks 6pcs 蛋黄 6个
sugar 180g 白糖 180克
Lady finger 手指饼干
Liqueur : Tia Maria/Rum/Brandy/Amaretto 甜酒
(as little or as much as you like according to taste,I use to add 13 teaspoons)
可以少或尽可能多,根据你喜欢的口味,我用13茶匙.
instant coffee powder 即溶咖啡粉(as little or as much as you like according to taste,I use to add 13 teaspoons)

(prefer espresso coffee from coffee machine )喜欢特浓咖啡直接从咖啡机出来,
cocoa powder 可可粉
做法method:
1 将蛋白和蛋黄分开,separate egg yolk & egg white
2 混合蛋黄,白糖,乳酪和甜酒 mix cheese, ,egg yolks ,sugar and wine equally until sugar dissolved.
3 把咖啡粉溶解在一杯温水中,适量取决于你要多少咖啡的味道和您使用的品牌。并放一边待凉。Dissolved the coffee powder in a cup of warm water, depend how much coffee taste and the brand that you use. And set a side to cold it.
4 手指饼干稍微蘸上咖啡水,排入杯子里,小心,要快,手指饼容易烂。Dip finger biscuits in coffee, be careful & quick, finger biscuits easily rotten ,place it into your cups...
5 铺上奶酪混合物在饼干上,spread the cheese mixture on the top of the biscuits
6 筛上可可粉薄层, sift layer of cocoa powder on the top.
8 送入冰箱冷冻3小时, chill for 3 hours.
